Fish Tacos

Fish Tacos
4 fish fillets
coarse salt
1/4 c cilantro
1 t oregano
1 t chili powder
2 limes juiced and zested

Coat fish in spices, saute until done, flake.  Serve with shredded cabbage, slice radishes, salsa, and guacamole.  Use steamed cabbage leaves for tacos.

1 lemon juiced
pepper, fresh cracked to taste

Pickled Radish Salad

I needed a side to go with Chicken Satay, and we had Halwa for dessert.

Pickled Radish Salad
4-5 radishes
1 apple
1/2 cucumber
1/2 diakon radish
cilantro
1 T sesame seed oil
2 T olive oil
3 T apple cider vinegar
2 t garlic powder

Thinly slice all vegetables, mix dressing, toss to coat, refrigerate/marinate until time to eat.

Greek Burgers

I usally overseason these, so even though it doesn't seem like you are adding very much to these...it is the perfect amount!

Greek Burgers
1 lb lamb
1 lemon zested
1 clove garlic, grated
1/2 t salt
1/2 t oregano
1/4 t garlic powder
1/4 t black pepper

Mix, form into patties.
Optional: add a cube of feta into the center of each patty as you form them.  Juice lemon over patties while they are cooking.

Baby Cakes

I was thinking to add a new texture to Evie's diet and now that she can have whole eggs I wanted to give this idea a try.  I had eaten a flourless banna muffin my friend Jenni had made, it was very sweet and delicious! and thought it would be simple to modify.  It was and was still delicious even without an added sweetener.  Unfortunately Evie thought they were yummy but is not currently interested in anything without a tougher crisper teething appropriate texture right now :)  These are more like...a cheesecake like texture.

Baby Cakes
3 eggs
6 overripe bananas
1/4 c flaxseed
dash of salt
1/4 c coconut flakes
3 T coconut oil

Puree in a vitamix, pour into muffin tin, bake 325 for 15-20 min, turn off oven and let sit in oven 15 min to firm.  Try not to eat all of them before offering them to your baby.  Eat warm from oven or cold from fridge.

Butternut, Green Pea, and Ground Beef Goulash

Butternut, Green Pea, and Ground Beef Goulash
1 1/3 lb ground beef
1 onion, chopped
2 c butternut squash, peeled and chopped
2 cloves garlic, minced
2 T paprika
2 t caraway seeds
2 c chicken broth
1/2 c green peas
salt to taste

Brown meat.  Add seasonings, onions, and butternut squash-- saute for 5 min.  Add broth, cover, and cook low for 20 min.  Add frozen green peas 5-10 min before serving.  Garnish with sour cream or yogurt.
