Raisin Cakes

Eh, why not.

Raisin Cake
1 c raisins
1 3/4 c water
1/4 c coconut water keffir
1/2 c butter substitute
1 t baking soda
1/2 t salt
1 c muscovado sugar
1/2 t ground cinnamon
1/2 t ground nutmeg
1 c chopped walnuts
1 c tapioca flour
1/4 c brown rice bran
1/2 c brown rice flour

Boil liquid and raisins for 10 minutes. Remove from heat, add butter, cool. Add remaining ingredients, mix well. Pour into greased bundt pan.
Bake 350F, 25-35 min
