Cranberry Orange Bread
3 c gf flour
3 T baking powder
3/4 t salt
2 1/4 t grated orange peel
1 1/2 c sugar*
3 eggs
3/4 c rice milk
3/4 c veg oil
1 1/2 c chopped cranberries (use a food processor)
1/4 c chopped nuts
350F, 25 min, grease bundt pan--sprinkle nuts in bottom of pan before batter. Dust with powder sugar or orange glaze.
Orange Glaze
1 c powder sugar
1 T & 1 t orange juice
*If made without any sugar, make into bread pudding.
